Love at first sight. This recipe was undeniably a must-make as soon as I glimpsed a picture and mumbled in disbelief, “is that an oreo?!” These have it all, a light whipped topping, smooth cheesecake center, and of course a delicious oreo crust. They are easy and impressive, and the cookie is a wonderful surprise. As soon as I turned them upside down to show off the oreo bottom in response to all the “what are these?” you can see it—-the look only an oreo can bring. Don’t we all have childhood memories with these treats? After all, they are ‘milk’s favorite cookie’.

|42||(1 package) cream-filled sandwich cookies, such as Oreos, 30 left whole, and 12 coarsely chopped|
|4||8 oz. packages cream cheese, room temperature (if its cold, your cheesecake will be lumpy)|
|1||tsp vanilla extract|
|4||large eggs, room temperature, lightly beaten|
|1||cup sour cream|
|Pinch of salt|
*if your package is short a few cookies, deduct those from the ones you were going to chop. No big deal : )
- Preheat oven to 275 degrees. Line standard muffin tins with paper liners. Place 1 whole cookie in the bottom of each lined cup.
- With an electric mixer on medium high speed, beat cream cheese until smooth, scraping down sides of bowl as needed. Gradually add sugar, and beat until combined. Beat in vanilla.
- Drizzle in eggs, a bit at a time, beating to combine and scraping down the sides of the bowl as needed. Beat in sour cream and salt. Stir in chopped cookies by hand.
Divide batter evenly among cookie-lined cups, filling each almost to the top. Bake, rotating pan halfway through, until filling is set, about 22 minutes. Transfer to wire racks to cool. Since you will be making more than one batch, I would recommend throwing the tray in the freezer for a few minutes to make them easier to remove from the tray and put in the fridge. Refrigerate at least 4 hours (or up to overnight). I recommend topping with whipped cream to keep it light since the rest of the cupcake is very heavy. Enjoy!
